Mine would be:
scribd.com - upload any document like Word, PDF, PPT and embed it into your blog/site/forum. It also converts your document into PDF, Word, Flashpaper and even MP3 for a Steven Hawking podcast. The YouTube of documents. (Unfortunately doesn't handle Publisher files yet)
del.icio.us - keep all your bookmarks and even better file them with tags so you can access them anywhere.
slideshare.net - upload your powerpoint or Open Office Impress presentations and embed them. The YouTube of slideshows.
video.google.com - upload video clips of any size (better than the 10min limit with YouTube) and have the videos downloadable and embeddable.
www.google.com/a/ - Google Apps - if you have a website/domain, you can use Google to handle your email and more. All my students have a 2.6 gig inbox, a personal online storage area for their work and a customisable calendar courtesy of Google Apps, and all with the domain 'learnhistory.org.uk'.
